Black Bean Brownies
NO Flour in these tender and yummy brownies!
1 can (15 oz.) black beans, drain but not rinsed
3 eggs
3 T. oil
1/2 c. unsweetened cocoa powder
1/2 tsp. baking powder
1 tsp. vanilla extract
2/3 c. sugar
1/4 tsp. salt
1/2 c. semi-sweet chocolate chips
Preheat oven to 350°.
Grease an 8x8 square pan.
Put black beans, eggs, oil in a food processor and process until smooth. Add cocoa powder, baking powder, vanilla, sugar, salt. Process just a few quick times to mix. Pour/scrape into prepared pan. Sprinkle chocolate chips evenly on top of batter. Bake for 30 to 35 minutes, or until a toothpick inserted in center comes out clean. Let cool on cooling rack before cutting/serving, they will be tender so cut small.
