NOTE: I am just learning that when FD meat is opened, it possibly needs to be used within a short period of time or sealed in glass jars. I have read 24 hours, 48 hours, and within a week.....thus I don't know yet for certain what is best? Make sure you do your own research on this.
Best way to reconstitute freeze-dried cheese: Place 2 cups of FD Cheese into a glass bowl. Lightly stir cheese with a spoon while slowly drizzling 1/2 cup of cold water over the cheese. Lightly stir constantly until all of the water is incorporated into the cheese. The water should just barely start to collect on the bottom of the glass bowl: this is a sign that the cheese has now absorbed enough water. Place the cheese into a zip-loc bag and store in the fridge overnight before use. It will last up to 8 days in the fridge. Adjust quantity reconstituted to your individual needs.
