Italian Lentil Stew
Tip: cook large amount of cracked wheat; also can cook large amounts of lentils ahead; chill; then divide into amounts listed for this recipe and freeze until needed. Makes a healthy fast food meal....
1/4 to 1/2 lb. sausage*
1 onion, finely chopped
1 clove garlic, minced
2 c. cooked green lentils
1 and 1/4 c. cooked cracked wheat
1 can (14.5 oz) crushed tomatoes
1 can tomato sauce (8 oz.)
up to 2 c. of water (use tomato sauce can)
2 to 3 tsp. italian seasonings
2 T. olive oil
salt and pepper to taste
In a large pot: brown meat, onion, and garlic. Add cooked lentils, cooked cracked wheat, crushed tomatoes, tomato sauce, water, olive oil and seasonings. Bring to a boil, turn heat to low, cover; simmer 15 to 20 minutes. Makes 6 to 8 servings. Leftovers chill/freeze well. Serve with Homemade Refrigerator Crescent Rolls or Whole Wheat Bread.
*Jimmy Dean is a good brand, buy it when on sale. Cook/crumble, let cool. Divide into snack baggies in the measured amounts you desire. Put those baggies into a quart zip lock, label, chill in fridge a few hours, then freeze. Ready to use, thaws quickly and so convenient.
