Speedy Spaghetti
One pot does it for this easy recipe. You will not be using a lid during the cooking process, nor when it sits to thicken.
2 to 3 T. butter or olive oil
3 cans (8 oz. each) tomato sauce
4 c. water (use the empty tomato sauce cans)
2 to 3 T. dry chopped onions
1 tsp. garlic salt (or to taste, maybe another tsp?)
2 to 4 tsp. Italian seasonings
8 oz. dry spaghetti noodles, broken in half if you wish
In a large pot, on high heat, bring to a rolling boil: oil, water, tomato sauce. (The water thins the sauce significantly, but don't worry, it will thicken up later). Stir in dry onions, garlic salt, and seasonings. Add spaghetti; stir, bring back to a full boil. Reduce heat to medium so the mixture is boiling, but gently. Cook uncovered 12 to 14 minutes, stirring often. Take the pot off heat source* and allow to sit for 14 minutes; stir a few times while it thickens. Spoon into pasta bowls and top each serving with dry parmesan cheese. Salt and pepper to taste.
Makes 4 to 6 servings.
*NOTE: can add 1/2 to 1 cup cooked ground beef/onions if you wish. Just add it when taking pot off heat source, stir to combine.
We have, at different times, added chopped canned mushrooms, or sauteed chopped bell peppers, or cooked chopped carrots. Also have added a tsp. of dried crushed basil or 2 T. fresh finely chopped basil.
