Soup.....Chili.....Stew
Pinto Bean Chili
This is made with a pound bag of pinto beans, which can be 2+ full cups of dry beans.
2 full c. dry pinto beans (1 lb. bag, sorted and rinsed)
7 to 8 c. water
Make sure to sort the pinto beans/rinse. Cook beans (I like to cook them in my crock pot).
When beans are cooked and tender, add:
1/2 to 1 lb. cooked ground beef
1 large onion, chopped, cooked with the ground beef
2 to 4 cloves garlic, minced
1 can crushed tomatoes (14.5 oz.)
1 can tomato sauce (8 oz.), if needed
2 to 4 T. chili powder
up to 1 tsp. ground cumin
1 tsp. smoked paprika
salt and pepper to taste
Put cooked ground beef/onions into crock pot with the cooked pintos. Add garlic, crushed tomatoes. Stir in chili powder, cumin, paprika, salt and pepper. Cover crock pot. Cook on high for 1 hour or so. Makes 6 to 8 servings. Great with cornmeal muffins or cornbread.
