Garbanzo Celery Salad

A healthy salad that is great to take to a potluck or picnic.

 

1/3 c. extra virgin olive oil

2 T. fresh lemon juice

2 T. white wine vinegar or white balsamic

2 cloves garlic, minced

1/2 tsp dry mustard

1 tsp. sea salt

2 cans (15 oz. each) garbanzo beans, drained 

8 large stalks celery with leaves, chopped or sliced

3 to 4 green onions, finely chopped (or 1/2 sweet onion, finely chopped)

ground pepper to taste

 

In a large bowl: whisk the olive oil, lemon juice, white wine vinegar, minced garlic, dry mustard, sea salt. Stir in drained garbanzos, celery, onions of choice, pepper to taste. This salad makes 8 servings. Will store in fridge several days,
