Beef n' Gravy over Mashed Potatoes
A simple dinner from shelf stable foods. Not only for a Survival Meal, but also for a FAST QUICK DINNER when you are tired or have but little time. Of course, this could also be served over baked potatoes or real mashed potatoes; or try it over cooked rice.
Make easy mashed potatoes:
1 and 1/4 c. boiling water
2 T. butter (or add 2 T. butter powder to the potato flakes after measuring)
1/2 tsp. garlic salt
1/2 c. cold water
1 and 1/3 c. dry potato flakes
2 T. dry milk powder
Add butter and garlic salt to boiling water, take off heat. Add cold water. Combine the potato flakes and dry milk, then add to the mixed water/butter by stirring lightly in with a fork just to fluff together. Let sit a few minutes.
Make the beef gravy:
1 can (12 oz.) roast beef in broth
3 T. dry beef gravy mix (see recipe in this cookbook)
Drain the roast beef liquids into a cup measure, adding water if needed to make 1 cup. Put into small saucepan with the dry gravy mix, stir with a wire whip to a smooth texture while heating on high. When it begins to thicken, turn off heat, keep stirring constantly, when gravy is fully thick, remove pan from heat source, cover the pan and let it sit while you cut the beef into bite sized pieces. Stir in beef, add water if wanting gravy to be thinner. Ready and hot to serve over the mashed potatoes.
