My Easy Oatmeal Bread

Easy to make in a bread machine. Can also make easily without a bread machine by putting ingredients into a freezer gallon ziploc bag, close, squish by hand until mixed and slightly sticky; not heavy....if it seems heavy, add water 1 T. at a time. Then wrap bag of dough in a towel, let raise to doubled, punch down, let raise again. Then form into a loaf, place in greased/floured loaf pan, cover, raise to doubled. Bake in pre-heated 350° oven for 35 to 40 minutes until loaf is golden brown and sounds hollow when tapped.

 

1 large egg, room temperature 

2 T. oil or very soft butter

1 c. very warm water (may need more as dough mixes)

1 c. quick oatmeal

3 T. dry milk powder

1 tsp. salt

2 T. whole wheat flour (can omit this and just add 2 more T. unbleached flour)

2 and 1/4 c. unbleached flour (may need more, 1 T. at a time)

1 T. dry yeast

1 to 3 T. sugar or brown sugar

 

Put these ingredients into bread machine in the order given above. Set to bread and light crust. Start. Check after it has mixed a couple of minutes to see if more water is needed or more flour is needed to make a slightly sticky, not heavy/dense dough. Best to check the dough again after it has mixed/rested/started mixing again in case adjustments need to be made with either flour or water 1 T. at a time.
