Simply Dessert
No Flour Peanut Butter Cookies
1 c. peanut butter, smooth or crunchy
1/2 c. brown sugar
1/2 tsp. baking soda
1 tsp. vanilla
1 large egg
Preheat oven to 325°.
Mix peanut butter, brown sugar, baking soda, vanilla, egg. Using a small scoop: place onto lightly greased baking pan about 2 inches apart. [Or gently roll into small balls about the size of walnuts]. Press each ball down with the back of a large spoon to somewhat flatten, or do the criss-cross fork method. Bake 14 minutes, until puffed up and they look set: they should not be browned on edges, if so they are over cooked. At this point, the cookies are very tender so cool 15 minutes in pan before moving to cooling rack. Makes 2 dozen.
