Soup.....Chili.....Stew

 

Easy Italian Bean Soup

Makes 4 to 5 delightfully delicious servings. Enjoy.

 

1 T. extra-virgin olive oil

1/2 lb. Jimmy Dean sausage (mild or hot, personal taste)

2 cloves crushed garlic

2 cans (15oz. each) cannellini beans, do not drain

about 3 c. water

1 T. chicken bouillon granules or paste

1 T. italian seasoning

about 3 c. chopped or sliced fresh baby spinach

1/4 c. chopped fresh basil

Salt and pepper, to taste

Optional toppings: grated Parmesan cheese, crushed red pepper

 

In a pot: brown sausage in olive oil. Add garlic, cook and stir one minute.  Add beans, water, chicken granules, italian seasoning. Bring to a boil, stir in spinach and basil. Turn heat to low, cover, cook 15 minutes. Season with salt and pepper. Ready to serve.
