Homemade Vegetable Soup
My version of Homemade vegetable soup is an easy-to-make-comfort-food, and so good! Don't let the 'long' list of ingredients stop you from trying this; it is worth the effort. We like this soup with homemade biscuits. Makes 6 to 8 servings.
1 stalk celery + leaves, chopped
1 onion, chopped
4 c. water
2 cloves garlic, minced
2 to 3 potatoes, peeled and diced
1 to 2 carrots, peeled and sliced
about 1 c. shredded cabbage
3 T. dry green or brown lentils
2 T. uncooked rice
1 can (14.5 oz.) crushed tomatoes
2 to 4 T. frozen peas
2 to 4 T. frozen corn
up to 1 can of green beans and liquids
4 T. cooked cracked wheat
up to 1 c. leftover cooked beans: white, black, red, or pinto, or mixed
In a large pot, on high heat: sauté/stir celery and onions in oil/butter until deep golden brown on edges. Add water, garlic, potatoes, carrots, cabbage, lentils, rice. Bring to a boil, turn down to medium low. Cover, cook 25 minutes. Turn heat to a low simmer, add crushed tomatoes, peas, corn, green beans, cooked beans. Cover, simmer 20 minutes. Stir occasionally. Add salt/pepper.
