Easy Fast Freezer Strawberry Jam

NOTES:  We like to use fresh lemon juice in this recipe, to us it really makes a difference in the flavor.  But can use 1 T. bottled lemon juice concentrate + 1 T. water instead.  

Cornaby's E-Z Gel is a modified cornstarch that is non GMO and gluten free. It acts quickly to thicken without the use of heat. When letting it sit for the 5 minutes: set your timer please!! No guessing. 

For the freezer containers: we like to use either the ball plastic freezer containers, or the zip-loc screw-lid containers.

Freezer Strawberry Jam

This is low sugar jam using Cornaby's E Z Gel... We like it because it has a wonderful fruit flavor, and more fruit than sugar!!

Wash and prepare strawberries, removing stems and any bruises. Finely chop the prepared berries using a food processor or sharp knife. For best results always use good quality red ripe strawberries. 

4 c. chopped strawberries**

2 c. sugar

2 T. fresh lemon juice

1/2 c. + 1 T.  E-Z Gel (see notes above)

 

Measure 4 cups fine-chopped strawberries and place in a medium bowl. Add sugar and lemon juice; stir well. Gradually add the E-Z Gel, stirring constantly until well mixed. Let the mixture stand for 5 minutes to thicken and then stir again. Jam can be used fresh or stored in the refrigerator for up to a week. If freezing: pour into freezer proof airtight containers leaving 3/4-inch space at the top for jam to expand when frozen.  Can freeze for up to one year.  When taking a container from freezer to use: let it thaw in the fridge overnight; use within a weeks time. 

 

**can use strawberries, or ripe peeled peaches finely diced, or crushed raspberries.
