Easy Soups From Canned Items 

Yes, we can just open some soup for an easy quick meal, yet isn't it nice to get some ideas for a meal made from our canned foods? My goal is to make an easy soup dinner once every few weeks using our oldest canned items first....this helps me keep things rotated. 

 

Mom's Tortilla Soup

2 cans (15 oz. each) pinto beans

1 can (13 oz.) chicken, chop into smaller pieces or shred 

1 or 2 cans (4 oz.) diced green chilis

water as needed

1/3 to 1/2 c. dried chopped onions

1 T. dried garlic bits

Chicken broth granules to taste

 

Open cans, do not drain. Put all except the chicken into a large pot and heat. Add chicken 2 minutes before turning off heat, this prevents it from getting stringy. Serve topped with crushed corn tortilla chips and grated cheddar cheese.

 

 

 

Quick Vegetable Pot O' Soup

This makes a lot of soup. Will keep in fridge for several days, or freeze leftovers, or give some to your neighbor. Serve with soda crackers.

 

2 cans (14.5 oz.) crushed tomatoes

1 can (6 oz.) tomato paste

1 can (15 oz.) green beans

1 can (15 oz.) corn

1 can (15 oz.) peas

1 can (15 oz.) sliced carrots

1 can (15 oz.) diced potatoes

1 can (15 oz.) lima beans (or cannellini beans) 

1 can (14.5 oz.) beef broth

1 T. dried parsley

1 to 2 tsp. garlic granules

1/4 c. dried chopped onions

 

Open all cans, do not drain. Put all into a Large Pot (or a large crock pot). Stir in parsley, garlic, onion. Bring to a boil, turn heat to low and simmer for 15 minutes.  (If using a crock pot, cook on high for a couple of hours or so, until hot).

Easy Taco Soup

1 can (15 oz.) hominy 

1 can (14.5 oz.) diced tomatoes

1 can (8 oz.) tomato sauce

1 can (4 oz.) diced green chilis

1 can (15 oz. each) of black beans, pinto beans, dark red kidney beans (or add an extra can of beans if you like: 4 cans total)

3 T. taco seasonings or 1 oz. packet taco seasonings

1 to 2 tsp. garlic granules 

1/4 tsp. cayenne (OPTIONAL)

 

Open cans, do not drain. Put all in a pot, stir in the taco seasonings and garlic; bring to a boil, cover, reduce heat to low, cook 10 to 15 minutes, stir occasionally. May decide to add up to a cup of water if preferred. 

 

Note #1: can dice up 8 oz. of Velveeta and add to hot soup; stir until melted.

Note #2: can add cooked ground beef if desired, or some canned ground beef; can top with sour cream, shredded cheese, cilantro.

 

 

 

Chili Veggie Soup

2 cans (15 oz. each) chili

1 can (15 oz.) mixed vegetables

1 can (15 oz.) corn

1 can (15 oz.) diced potatoes

1 can (15 oz.) green beans

1 can (14.5 oz.) petite diced tomatoes

chili powder to taste

 

Open cans, do not drain. Put all into a large pot, add chili powder to taste, cover and heat on medium until it just comes to a boil. Team this up with corn muffins or grilled cheese sandwiches.
